O’Gourmet Food Hall Chili Chocolate Mousse

Chili and chocolate is a wicked, wanton pairing. Chocolate is deep and dark; spicy notes with a bass pounding beat. Chili is bright and spicy – a spark of fire like the river of sound from a sharp sexy saxophone. Together, they play off each other and intensify their own qualities to create an extraordinarily beautiful fusion.

This mousse was created as the last dish in a Spanish red wine tasting at O’Gourmet Food Hall. It was paired with a Humiliat 2008 – a red that is complex, with a depth of flavour and contrast. The pairing of chili and chocolate brought out the various notes in the red wine, and deepened its complexity even further.

Do note that I used organic eggs for this recipe – and this is crucial because the egg white is not cooked. If you have concerns, use pasturised eggs if possible. And do balance the amount of chili to suit your taste. I used Kashmiri chili from O’Gourmet – which is full of fire, and yet smooth and gorgeous. The thing I love about this chili is that in sweet dishes (I used it in a vanilla ice cream before as well), it really allows for stages of flavour – the first hit you get is chocolate, and then suddenly, fire. Its very more-ish, and brings about a flush of passion in those who consume it.

This is not a diet dessert by any standards – chocolate, lashings of cream, butter and eggs. Its rich, but the chili somehow adds a fresh, wild note. And as laden as it is with calories, it uses very simple ingredients – and if you make sure they are top quality, the taste will be sublime. You also cant have huge bowlfuls of this dessert – it is best served as a delightful, delectable taste, may be with a dark cup of coffee.

Do please note that I made this mousse to feed about 20 – 30 people (albeit in tiny little cups). You could probably feed 8 – 10 people with leftovers. Make in little individual serving pots, or one large, luscious bowlful – its up to you. But do make sure you add the whipped cream on top (and a few chocolate shavings or nuggets) – its all about the contrast and layers of flavour.

Makes about 4 – 5 cups

  • 10 ounces best quality bittersweet chocolate (at least 72%) broken into chunks
  • 6 tbsp butter
  • Pinch of salt
  • 1 + 2 tbsp vanilla extract
  • 6 eggs, separated
  • 3 + 3 tbsp light brown sugar
  • 2 + 1 cups cream
  • 2 tsp chili powder (or to taste)
  • Chocolate chunks or curls to decorate

Fill a saucepan with boiling water, and place a small metal bowl on top. Melt the chocolate in the small bowl, and add the butter. When the butter is melted, whisk in the egg yolks (they will stiffen the mixture), salt, and vanilla. Stir well, and take off the heat. Pour the chocolate mixture into a large bowl, and set aside.

Whip the egg whites, adding 3 tbsp of light brown sugar, until the egg whites are very stiff, and hold high peaks. Fold about 1/3rd of the egg whites into the chocolate mixture to lighten it, and then gently fold the rest in. Cover the bowl, and place in the fridge.

Whip 2 cups of cream until stiff, and then remove the chocolate mixture from the fridge. Fold the cream in gently. Sprinkle the chili over the mousse in 1/2 tsp portions, and fold until completely incorporated. Taste and keep adding until to your taste. I like it hot!

 

Chill the mousse for at least half an hour. If you are serving it in individual portions, spoon or pipe into cups. If you are serving in a large bowl, spoon into the bowl and cover.

 

Whip  the remaining 1 cup of cream, 2 tbsp vanilla extract and 3 tbsp light brown sugar together and pipe or spoon over the prepared and chilled mousse. Decorate with chocolate and cool in the fridge for 2 hours minimum, or up to 24.

Serve with joy!

Twice Baked Caramelised Onion Cheese Tarts

This is a complex, work intensive dish, but the results are nothing short of spectacular, if I might say so myself. The rich buttery puff pastry holds a wonderful creamy base laden with succulent deeply wine-y caramelised onions. Topped with melted raclette, the tart is complicated, delicious and very satisfying. These were created as a tapas for the O’Gourmet Food Hall Spanish red wine tasting, and were paired with a beautiful, organic Crianza 2005.

The onions were caramelised in an entire bottle of Crianza 2005, and cooked down into a thick jammy muddle for four hours. The puff pastry is simple, if you an find an all butter prepared puff pastry. If you cant, there are some amazingly easy recipes for foolproof puff pastry made with your food processor available online. Dont, under any circumstances, use puff pastry that is made with vegetable fat – it ruins everything!

Part of the problem with tarts of this kind is that even though the top bakes up gorgeously, the bottom is often underbaked. I solved this problem by baking the tarts as per normal, letting them cool for a few minutes, taking them out of their muffin tins, and flipping them over onto a baking sheet. I then baked them again in a very hot oven for about ten minutes, until the bottoms were golden and crisp, and just as delicious as the tops! We must always have balance in cooking…as in life.

I used raclette in this tart – a smooth very creamy melting cheese, often added to fondues. The cheese is rich and salty, yet mild. It compliments the onions, without overwhelming them. Baked into the tart the raclette melds with the onions and savoury custard into a molten cheesy joy.

You can serve this tart warm from the oven, or at room temperature within 24 hours. The recipe for the onions makes more than you need. Any extra can be used as the base for a magnificent pasta, a grilled cheese sandwich, or to spark your cooking imagination!

Makes 20 medium sized tarts. Do adjust for your own crowd!

Twice Baked Caramelised Red Wine Onion Tarts with Raclette

Caramelised Red Wine Onions

  • 1 cup (2 sticks – 16 tbsp) butter
  • 8 cups (approximately 8 – 10 medium) yellow onions, sliced in fine half rings
  • 1 bottle red wine (I used QV Crianza 2005)
  • 1/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 1/2 cup light brown sugar (organic if possible)
  • Pepper and salt

In a large, heavy pan, over medium low heat, melt the butter. While the butter is slowly melting, prepare the onions. Peel, cut in half (from stem to root), and slice thinly. I always keep root intact to hold the onion together while I slice it.

Once the butter has melted, add the onions, and toss so that they are covered completely by the butter. Add about half a bottle of wine, the red wine vinegar, balsamic, sugar and a lot of pepper and a bit of salt. Stir well to combine, and cover the pan with a tight fitting lid. Reduce the heat a tad, and allow the mixture to simmer, stirring every ten minutes or so for about an hour.

By the end of an hour or so, the onions should be stained dark red with the wine, and quite soft. Remove the lid, add the remaining wine, stir well, and allow to cook down for another three hours or so, stirring every half an hour to make sure the onions dont burn. You can judge when you feel they are ready, but do try and give them as much time as possible. They will turn a deep dark wine red.

When the onions are ready, take off heat, and allow to cool to room temperature. Taste and adjust for salt and pepper.

These may be kept, covered, in the fridge, for up to 3 weeks.

Assembly

  • 5 to 6 sheets all butter puff pastry (enough for 20 squares to fit muffin tins)
  • Caramelised onions
  • 4 eggs
  • 2 cups cream
  • Salt and pepper
  • 300 gm raclette or other melting cheese, sliced thinly

Preheat the oven to 180C (350F). Spray a muffin tin pan with non stick spray (I used an organic canola oil). Line a large baking sheet with parchment or baking paper.

The puff pastry should be quite cold, yet malleable. If you have made fresh puff pastry, make sure you pop it in the freezer for about 5 minutes before cutting it. Cut the puff pastry into squares larger than the width of the muffin tin and place one square in each. I like the squares with the edges rough and untamed. I tend to like these tarts look rustic, but if you prefer an ordered tart, by all means cut big rounds.

Pierce the pastry with a fork all over (particularly the bottom), and bake in the oven for about 10 – 15 minutes until light golden.

Meanwhile, whisk together the eggs and cream, season with a bit of salt and pepper, and place in a pouring jug.

Once the pastry has been baked to golden brown, remove from the oven and let cool for a few minutes.

Place a tablespoon or more of the caramelised onions in each tart, and pour over the custard mixture. Bake again in the oven for about 1o minutes, and then remove and top the tarts with the sliced raclette or other melting cheese. Bake again for a further five minutes or so, or until the cheese has melted and is starting to bubble, and the custard is just set.

Remove the tarts from the oven and allow to cool for about 10 – 15 minutes. Remove from the muffin tins, and place onto the prepared baking pan upside down. Bake in the hot oven for a further 5 – 10 minutes, or until the bottoms are crispy and browned.

Allow to cool for at least 10 minutes before serving, or serve at room temperature within 1 day.

Red Wine Poached Figs Baked with Fourme D’Ambert

I could eat these figs all day. They are sensuous, sweet, sticky, salty, just a little burnt… totally delectable. I created them for the O’Gourmet Food Hall wine tasting, and they were paired with (and poached in) a Luberri 2009. The figs interacted extremely well with the wine, opening it up and accenting its unique properties.

This is an easy dish to prepare, as long as you take your time, and are aware of the quality of ingredients. I used large, soft Turkish dried figs to start with, and slowly poached them in a bottle of red wine until they were succulent and very soft. I then drained them, and allowed them to cool for a few hours.

When they were ready, I split them sideways, and stuffed them with a dream of a cheese: one of the oldest French cheeses, Fourme d’Ambert. This blue is nutty, semi-hard and complex. Its manufacture dates back to Roman times, and it has an ageless grace and elegance. Baked stuffed in the figs, the cheese goes soft and slightly burnt around the edges, capturing and contrasting with the sticky sweetness of the figs. Fourme d’Ambert also has wine notes, so it also picks up and amplifies the flavours of the wine the figs have been poached in.

These gorgeous babies can be prepared a few hours in advance, and still be incredibly delicious. I must admit though, they are phenomenal straight out of the oven, with the Fourme d’Ambert bubbling away, and the scent of wine and cheese tantalising. I would serve a few with a bitter salad as a starter.

I made 20 figs for the wine tasting. Do adjust to your own crowd 😉

Red Wine Poached Fig baked with Fourme d'Ambert

  • 20 large, soft dried Turkish figs
  • 1 bottle Luberri 2009 (or other complex red Spanish wine)
  • 300 g Fourme d’Ambert (or other semi-hard blue cheese)

Place the figs in a large saucepan. Cover the figs with wine, and bring to the boil over medium high heat. As soon as the wine is boiling, turn the heat down to medium low, and poach / simmer the figs for at least 20 – 30 minutes or until very soft and yielding.

Drain the figs out of the wine (reserve the wine for the optional sauce below), and leave to cool for at least 2 – 3 hours, or even over night.

Preheat the oven to 180C (360 F). Line a large baking sheet with parchment paper.

Using a scissors or very sharp knife, split the figs in half side ways – though if you really want to do it top to tail, who am I to stop you?

Stuff about a tablespoon of cheese in the centre of each fig, and place the fig on the baking sheet, stem side up.

Once you have stuffed all the figs, bake in the hot oven for 5 – 10 minutes, until the cheese has melted, and is bubbly and starts to burn just around the edges. The wine soaked figs will also become shiny and sticky.

Serve hot, or at room temperature.

These figs will keep for 2 – 3 days, covered in the fridge. To serve, bring to room temperature.

For optional wine glaze:

If you are serving the figs as a starter, you could glaze them with a reduction of red wine.

  • Remaining wine from poaching figs
  • 1/2 tsp cinnamon
  • 1 tbsp honey
  • 1 tbsp balsamic

In a medium saucepan, combine the wine, cinnamon, honey and balsamic. Simmer over medium low heat until reduced to a thick shiny glaze. Taste and adjust seasoning. Drizzle over figs just before serving.

Tapenade with French Bread Toasts

I made this tapenade for a wine tasting at O’Gourmet Food Hall. It was paired with a Santanegro Syrah 2008 – a light red wine. I think tapenade is one of the most delightful of the vegan/vegetarian starters – its so easy to make, and yet has such complex flavours, particularly if you get the balance right. Because its so simple, its important to ensure that all the components are beautifully presented.

I used a really good quality french bread for the toasts – sliced on the diagonal, and then brushed with a mixture of virgin olive oil, Maldon salt and a few cloves of garlic. Baked in the oven until golden brown, they were then covered with the tapenade, and a small sprig of parsley. Obviously, the parsley isnt neccessary, but it makes it look so pretty and elegant.

I love the lemon in this tapenade. It brightens the dark complexity of the olives and oil, and brings a freshness and clarity to the taste of the paste. You could use this as a starter, or in so many other things – a few tablespoons mixed with angel hair pasta gives you a quick and satisfying dinner; a teaspoon or so spread on bread is the basis for a sandwich with intriguing depth, and as a dip for crudites, this is strong and delicious.

This recipe makes about 2 – 2 1/2 cups. I made 20 appetisers and had enough left over for a snack later!

Tapenade with French bread toasts

For the Tapenade

  • 2 cups black olives (drained and pitted if needed)
  • 1 cup green olives (drained and pitted if needed)
  • 1/4 cup extra virgin olive oil (organic if you can find it)
  • 1 lemon
  • 2 cloves of garlic
  • 2 – 3 tbsp caper berries

In a large bowl, combine the olives, about half the olive oil, the grated zest of the lemon (I use a Microplane lemon grater), the garlic cloves cut in half, and the caper berries. You can use a food processor to blitz everything, but I actually like using my immersion blender. It gives much more control, and you can decide when the tapenade is of the consistency that you prefer. I personally like it a little chunky, but you can process until almost smooth.

Squeeze the juice of half the lemon into the mixture, and stir well. Taste and adjust flavourings. You shouldnt need salt as the the olives are usually quite salty, but if you really want it, add. I usually adjust the lemon a little, or the caper berries.

Cover the tapenade with the remaining olive oil, and set aside for at least 2 hours, or overnight to let all the flavours meld.

For the toasts and to serve

  • 2 small (or 1 large) loaves fresh, crusty French bread
  • 3 – 4 tablespoons extra virgin olive oil
  • large pinch of Maldon Salt
  • 2 cloves of garlic, sliced thickly
  • Small bunch of Italian parsley

Preheat your oven to 180C (350F). Line a large baking sheet with parchment or baking paper.

Slice the loaves on the diagonal, and place the sliced bread on the baking sheet.

Mix the olive oil, salt and garlic together in a small bowl, and using a pastry brush, brush the bread with the olive oil mixture. Add extra olive oil if needed, but you dont want it too oily.

Bake the toasts in the oven for approximately 5 – 10 minutes until light golden.

Can be prepared up to 2 days in advance.

To serve, spoon about a tablespoon of tapenade on each toast. Top with a small sprig of parsley, and serve.

Wine Tasting + Tapas at O’Gourmet Food Hall

Last night was really exciting in my adventures as a cook. M. Sebastien had been after me for some time to create some food pairings for his monthly wine tastings at O’Gourmet Food Hall. It was a tasting of Spanish reds … and M. Sebastien was intrigued by the notion that vegetarian food could be paired well with such bold strong wines. When people think of red wine, they almost immediately think of red meats – robust, dark and complex flavours.

M. Sebastien challenged me to think up a menu that would complement his red wines which steadily built in terms of taste and complexity. We went through the list together, and he told me the spices, notes, flavours and depth of each wine. I came up with a food pairing that I felt would match and bring out the unique attributes of the wine. Together, we refined the flavours, and discussed the cheese I would cook with (three of the courses had cheese in the recipe).

In my life as a cook, this was a daunting, and yet ultimately satisfying project. I had 24 hours to cook for 20 people, I helped to serve all the courses, and enjoyed the positive feedback and interaction. I never would have imagined I could do something like this a mere six months ago, but I have been stretched to challenge myself – by good friends and loved ones – and it has paid off.

I will post the recipes for all five courses in the coming few days, but I thought you might like to take a glance at the menu from last night.

Santonegro Syrah 2008 – A light wine, simple and fresh.

Paired with tapenade on crusty french bread toasts. I brushed the sliced french bread with a mixture of Maldon salt, garlic and organic olive oil and baked it in the oven. The tapenade was a gorgeous mixture of black olives, green olives, organic olive oil, caper berries, a touch of garlic, and grated lemon peel. The lemon peel elevated the flavour and made the tapenade sparkle.

Paired with red peppers and goat’s cheese feta with smoked paprika. The red peppers were marinated overnight in herbs, garlic, olive oil and a touch of old balsamic. They were then enriched by the deep dark notes of smoked paprika.

Luberri 2009 – a unique open taste – people have strong opinions about this wine as it stands up to you.

Paired with Turkish figs poached in red wine and baked with fourme d’ambert. These gorgeous dried figs were poached until they were velvety and succulent, split open and baked with a beautiful french blue cheese. The taste was a fascinating melding of sweet and salty, sticky and sensuous.

QV Crianza 2005 – a fantastic wine, organic, deeply lush and beautiful.

Paired with a caramelised garlic and raclette tart baked with a light custard. The caramelised onions were cooked for four and half hours, in a bottle of the QV Crianza, until they were dark and sticky, almost an onion jam. They were then baked in a butter puff pastry shell, with a light kiss of savoury custard and some smooth raclette to finish.

Humiliat 2008 – a wine that starts out closed, but opens up into complex and deep flavours.

Paired with a chili chocolate mousse with vanilla whipped cream. The chocolate mousse was made with pure bittersweet chocolate, and I made sure not to add too much sugar. However, the whipped cream gave it balance, adding sweetness and creaminess to the final taste. The chili brought everything alive, and added fire and passion.

O’Gourmet Truffled Macaroni and Cheese

I love macaroni and cheese, the beautiful pasta, coated with a creamy blanket of cheesy indulgence. The crispy top, making way for a melting interior. Whats not to love? Well, some varieties of mac and cheese are plainly unappetising, made from over processed, pasturised ingredients that have all the life and soul taken out of them (once youve seen that orange glow, you will never forget it!). I wanted to make a different kind of macaroni and cheese – a sensuous, indulgent meal, ripe with scent, taste, texture and balance. This macaroni and cheese is slightly wicked, a tad naughty, and very memorable. It can be served at a celebration – birthday, New Years, holidays of every kind – or just because you want to say I love you. Honestly, they will get the message!

A dish like this needs to be in part based on thought and consideration, and in part on pure inspiration. So I wandered the O’Gourmet Food Hall to see what might present itself. First under consideration was the pasta. I decided on La Collina Toscana pasta, made in Italy, and rather than macaroni, a conchiglie shape – like a small conch or sea shell. Gorgeous, naturally dried, hand crafted pasta, with a shape that has the same benefits of macaroni (the curved tubular shape catches and holds sauce well), and yet has a more elegant look to it. But of course, I dont want to be proscriptive, so use whichever pasta strikes your fancy!

I feel that macaroni and cheese can sometimes be a tad overwhelmingly rich, and I noted some gorgeously fresh organic baby spinach, so I decided to include a surprise nestled in the depths of the pasta – bright clean spinach, sauteed with white onion, and candied, caramelised garlic. I wanted to make the garlic a little differently from the original Ottolenghi recipe I used, and so decided that instead of water, I would use wine! But then, I saw Fre wines – alcohol-removed wine. Yes, honestly!

I read the taste tests, and while there is definitely something missing (the alcohol!), there is a unanimous agreement that the taste is still there… somewhat! I thought that it might be very interesting to try cooking with this non-alcoholic wine. Would you get the same taste, roundness of flavour, haunting notes of fruit and honey and sunshine, as with regular wine? I decided I would use the Fre premium white wine in the sauce, and the Fre premium red wine in creating the caramelised garlic (in place of water in the original recipe). I found that there was certainly a hint of winey flavour to the sauce and garlic, but that depth of flavour, the resonance of the wine, the layers of scent and taste, were not as fully realised. I think the next time I make this pasta, I will use regular wine, but when I am cooking for those who have issues with alcohol in their food, I would most certainly go back to the Fre. And again, if you prefer cooking with wine, please, go ahead and give in to the urge 😉

And finally, truffles. I felt that truffles added to the cheese sauce would elevate this dish into a celebratory, special meal. I looked around, and decided to layer the different truffle tastes – starting with the amazingly hedonistic truffle oil from Vom Fass, which I used to permeate everything from the spinach to the garlic to the cheese sauce. I seasoned everything with truffle sea salt, and finally, I found Himalayan truffles (tuber indicum), an inexpensive (relatively) jar of black truffles from the Himalayas. I loved these truffles. They were easy to work with, and imbued the pasta with their own truffled scent – not quite as all inclusive as European truffles, which seem to have the reach and depth of durian, but with their own nutty, dark, rich flavour.

And when I spoke to M. Sebastien in the cheese room, he suggested that I use a Brillat-Savarin (a triple cream, soft, brie-like cheese) which had been layered, and thus completely permeated, with truffles. I used organic white cheddar and a beautiful aged crumbly parmesan as well, but I promise you, when I sliced open that Brillat-Savarin, and saw the thick soft melting consistency, and smelled that unique combination of cheese and truffle… well, I wanted to rub it all over me! Incredibly luxurious and such a beautiful addition to the pasta.

This dish looks like a lot of work, and it certainly will take a couple of hours of cooking. But a lot can be done ahead of time – the garlic can be candied and caramelised in about half an hour or so, and can be stored in the fridge for about 2 weeks. The spinach can be sauteed and kept, covered, in the fridge for 3 days. Even the cheese sauce can be made the day before (though I would whisk in the egg at the last minute), and combined with the pasta just before baking. I served the dish with a simple salad of bitter arugula (rocket) and ribboned organic carrots, with a dressing of balsamic, truffle oil and soy sauce. It was a bright counterpoint to the luxury of the main course.

This truffled macaroni and cheese is worth the work and the care, the loving sourcing of beautiful ingredients. The result is a gift to the people you love, and to yourself.

Serves 6 – 8 people

Candied Caramelised Garlic (adapted from Yotam Ottolenghi’s Plenty)

  • 2 cups Fre premium red wine (or a good red wine)
  • 1 1/2 cups garlic cloves (about 2 heads – 30 cloves or so)
  • 2 tbsp + 1 tsp truffle oil
  • 1 tbsp caster sugar or light brown sugar
  • 2 tbsp best quality balsamic vinegar (I used a 25 year old balsamic from Vom Fass – it was astonishing!)
  • 1 tsp herbes de Provence or mixed Italian/French herbs
  • 1/2 tsp truffle salt (if you have it – otherwise a good sea salt is fine)

Combine the red wine and garlic cloves in a medium saucepan. Bring to the boil over medium low heat, and simmer for about 5 minutes.

Drain the red wine from the garlic cloves, reserving the red wine for later. Clean the saucepan well and dry it, and place the garlic cloves and the truffle oil into the saucepan together.

Saute the garlic in the oil for about 5 minutes or so, on medium high heat, or until the garlic has softened, released its intrinsic garlic scent, and become lightly browned.

Measure out about 1 1/2 cups of the red wine, and combine with the sugar, balsamic, herbs and salt. Pour over the garlic in the saucepan. Be careful, because it will splatter a bit.

Simmer on medium high heat for about 15 – 20 minutes, or until the liquid has almost completely reduced, and the garlic is dark red, sticky, candied and caramelised. Take off the heat, and pour over the remaining 1 tsp of truffle oil.

This candied garlic will keep in the fridge, covered for at least 2 weeks, but you will probably eat it before then! It can be an astonishing addition to salads, soups, risottos, pastas, sandwiches – just about anything you can imagine!

Sauteed Spinach

  • 2 tbsp + 1 tsp truffle oil
  • 1 cup finely chopped white onion (1 small onion or 1/2 large)
  • Truffle salt and pepper to taste
  • 3 – 4 cups organic baby spinach, washed and roughly chopped

In a medium sized pan, over medium heat, combine the 2 tbsp of truffle oil and the white onion. Saute for 5 – 10 minutes, or until the onion goes glossy, soft and shiny. You dont want it to burn, but you do want it to reach that moment just before it caramelises!

Season with truffle salt and pepper, and add the baby spinach. Raise the heat a little, and saute quickly. The spinach will turn bright green, and will release some of its liquid. This is perfect. Remove from heat, taste and adjust seasonings, and pour over the final teaspoon of truffle oil.

You can reserve this spinach for up to 3 days, covered in the fridge. It also makes a sublime side dish!

Truffled Three Cheese Sauce

  • 1 cup cream
  • 1 cup whole milk
  • Truffles – as much as you want or can afford! I used a 100 g jar of Himalayan truffles plus 2 tbsp of truffle oil plus 1/2 tsp of truffle salt
  • 3 tbsp butter
  • 2 tbsp truffle oil
  • 3 tbsp flour
  • 1 + 1 cup Fre premium white wine (or regular white wine – or even sparkling wine!)
  • 1/2 tsp (or less – to your taste) English mustard powder or Dijon mustard
  • 8 oz (about 2 cups) grated white organic cheddar
  • 200 g (about 7 oz) truffled Brillat Savarin
  • 1/2 cup grated best quality parmesan
  • Truffle salt and pepper to taste

In a medium large saucepan, combine the cream and milk. Grate over the truffles (I used a Microplane zester to shave the truffles very small and fine), and add the truffle oil and truffle salt, if using. Over low heat, warm the cream/milk/truffle mixture until it is just steaming – about 75C or 165F. Stir often. Once the mixture reaches the steaming stage, remove from heat, and let steep for at least an hour. This infusion step is important! It makes sure that the taste of the truffles is all over that sauce.

In a medium large saucepan, melt the butter and truffle oil over medium low heat. Once the butter has melted completely, add the flour, and stir well. This roux will form the basis of your sauce, so make sure that you take your time and cook it well. You want it the colour of light teak – keep your nerve. Dont burn it, but dont let it stay too pale either. I would cook for at least 5 minutes, up to 10, depending on the heat source.

Once the roux has cooked to your liking, lower the heat a bit, and add 1 cup of the white wine, whisking constantly. The mixture will immediately seize up and become very thick. Whisk in all of the steeped milk/cream/truffle mixture, and continue to whisk well. Taste. Add the remaining 1 cup of white wine, tasting every 1/4th cup or so. You dont need to add it all if the mixture becomes too heavily winey.

Sprinkle over the mustard powder or the Dijon mustard, and whisk well to combine.

Bring the heat up to medium low, and sprinkle over the cheddar. Continue whisking the sauce as you incorporate the cheddar into the mix. Taste and adjust seasonings again.

Slice the bottom rind off the Brillat Savarin, and using a teaspoon, scoop it out of its rind. Add to the sauce, and whisk well to combine.

Sprinkle over the parmesan, and whisk well, until the cheese is melted and well mixed.

Remove the sauce from the heat and allow to cool to tepid bathwater heat. Whisk in the egg yolks to enrich the sauce, and adjust for seasoning.

The cheese sauce can be made up to a day of time, before adding the egg yolks. Keep tightly covered in the fridge, and bring to room temperature before whisking in the egg yolks and assembling the main dish.

This sauce would be wonderful served as is, not baked, with angel hair pasta or linguine!

Truffled Macaroni and Cheese – Assembly

You can serve this in individual small ceramic baking pots, bake it in loaf tins (it will fill three tins), or a large enameled baking dish. Your choice – I think it depends on how and who you are going to serve! Individual pots are a very elegant presentation, but loaf tins or a large baking dish bring a casual luxury to the meal.

  • 500 g macaroni, elbow, conchiglie, or other tubular pasta
  • Truffled Three Cheese Sauce
  • Caramelised Garlic
  • Sauteed Spinach
  • Handful of Italian parsley, finely minced
  • 1/2 cup breadcrumbs (I used Panko)
  • 1/2 cup parmesan
  • A few teaspoons of truffle oil to finish

Preheat the oven to 160C (325F), and have your baking pans ready.

Prepare macaroni or other tubular pasta according to the packet directions, in a large saucepan or pot, over high heat, in heavily salted boiling water, but taste a few minutes shy of the time indicated on the packaging. I cooked conchiglie pasta, and the packet said 15 minutes. I cooked it for 11 minutes, to just before al dente.

Drain the pasta, and place in a large mixing bowl. Pour over about three quarters of the cheese sauce and stir well to combine. Taste for salt and pepper and adjust.

Place about half of the pasta in your baking pots/tin/dish. Press down to ensure that the pasta is snug. Ladle about half of the remaining sauce over the pasta. Using your hands, squeeze out the liquid from the reserved spinach, and place it in an even layer over the pasta, leaving about 1/2 inch rim free around the edge of the dish. Stud the spinach with the caramelised garlic – as much or as little as you wish, though i went easy on it. I wanted a spark of intense flavour, but I did not want to overwhelm the delicacy of the pasta. Add the rest of the pasta to the dish, and ladle over the remaining sauce.

In a small bowl, mix together the Italian parsley, breadcrumbs and parmesan, and sprinkle evenly over the pasta.

Bake in the oven for 45 minutes to an hour, or until the pasta is bubbling and hot, and a crisp, golden crust has formed.

Just before serving, sprinkle lightly with the truffle oil to really bring out the scent.

Butternut Couscous

With Walnuts + Goats Cheese + Red Wine SauceToday we started getting in gear for Queen Z’s 1st Birthday Party. Did most of the shopping and I prepared the butter cookies for baking tomorrow morning. So tonight, we wanted a good and simple meal that would nourish us and keep us going! I decided to cook the butternut that has been sitting on the table looking at me friendly like for the last couple of days. My friend, Floating Lemons, posted a recipe on my Facebook page that inspired me.

I decided to make roasted butternut and combine it with toasted spiced walnuts and some gorgeous blue goat’s cheese I found at the market. I wanted to serve it with spinach couscous, which I have made before. As the recipe was coming together, I decided that the butternut and couscous together would be a bit dry – so I made a red wine orange sauce on the fly! I combined the butternut with the walnuts and cheese, placed them on the green flecked couscous, and drizzled the wine sauce over. It was delicious! And a great example of how a recipe can expand as you make it.

This may seem a little complex, but to be honest, I made the whole thing in one small saucepan (with a tight fitting lid!), and a roasting dish. We all have too much on our plates for me to start cooking with a thousand pots, so the recipe will reflect the step by step process I went through. It feels and sounds quite complicated, but if you read the recipe a few times, you will see that its really easy peasy!

I started the butternut roasting and then got on with the rest – toasted the walnuts, chopped the cheese (which you can omit easily if you are vegan), made the sauce and the couscous. By the time the butternut was ready, the other ingredients were just waiting to be combined!

This meal will serve 4 hungry greedy people or 6 refined ones. You can easily cut it in half as well, or double it if needed. Enjoy!

Roasted Butternut

  • 1 medium butternut, peeled, seeded and chopped
  • 9 – 12 cloves of garlic, peeled
  • 1 tbsp olive oil
  • Salt and pepper

Preheat the oven to 200C (400F).

In a large bowl, using your hands, combine the butternut, garlic and olive oil. The oil should lightly coat the butternut, not overwhelm it. Salt and pepper lightly and mix again with your hands to combine.

Line a jelly roll pan or cookie sheet with parchment paper. Arrange the butternut and garlic in a single layer on the pan, and roast for at least 30 minutes (it can go up to about 45) or until the butternut are soft, and slightly caramelised around the edges.

Once the butternut has roasted to your preference, take out of the oven and set aside to cool a little.

Toasted Walnuts

  • 1/2 cup walnuts
  • 1 tsp (or more) paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • A few drops (literally) of olive oil

Chop the walnuts into small chunks, and put them into a non stick saucepan.

Place saucepan over medium heat, and start to toast the walnuts. You need to watch quite carefully so they dont burn, and stir often with a wooden spoon. If you are worried, lower the heat a bit. The oils in the walnuts will release and you will smell the wonderful, unmatchable scent of toasted nuts. Gorgeous.

Once the walnuts have just started to toast, sprinkle the paprika, red pepper and salt over the walnuts and stir to combine. Wait for the spicy scent to hit you and then drop a few drops of olive oil over all, and stir. The olive oil will help the spices adhere to the walnuts.

Toast for about a minute or so more – and taste to see if its to your liking. If so, take off the heat, and set the walnuts aside. I put them in a teacup!

Red Wine Orange Sauce

  • 1/2 cup good red wine
  • 1/4 cup orange juice – fresh squeezed is best but if you only have orange juice from a carton thats fine too – it will be a bit sweet, and you might have to adjust accordingly.
  • 1 tbsp butter (or Earth Balance margarine if you are vegan)
  • Salt to taste (I only used a tiny pinch)
  • 2 tbsp sour cream (or heavy cream – or if youre vegan, use coconut cream or soy creamer/milk – oat milk would be good here too) – optional

This is not tons of sauce, its just a lick to give moisture and flavour.

Clean out the saucepan, and combine the red wine and orange juice together. Over high heat, bring the mixture to the boil, and boil quite rapidly until reduced by at least a third, and up to half.

Whisk in the butter or margarine, and add salt to taste. You should have quite a thick winey sauce – almost a glaze – with a strong orange flavour. Orange goes beautifully with butternut, so this will only brighten its amazing taste.

Whisk in the sour cream, if using, until the sauce is smooth. Taste and adjust salt. You could add some pepper as well, though I chose not to.

Pour into a teacup or mug (or small bowl, if youre fancy!) and set aside.

Spinach Couscous

  • 10 oz (about 280 g) box of couscous
  • 1 3/4 cup water
  • 1 tbsp butter or olive oil
  • 1/2 tsp salt, or to taste
  • 1 cup raw baby spinach, minced

Clean out your saucepan again, and  heat water, butter or olive oil and salt until the water comes to a full boil. Stir in the couscous, and take the saucepan off the heat. Cover with lid, and allow to sit for five minutes.

Mince the spinach very fine.

Remove the lid from the saucepan, and using a fork, fluff the couscous. Add the spinach all at once and mix thoroughly to combine. Taste and adjust seasoning.

Assembly

  • Roasted Butternut and Garlic
  • Toasted Walnuts
  • 1/2 cup blue goat’s cheese or chevre (optional)
  • Red Wine Orange Sauce
  • Spinach Couscous

The roasted butternut should have cooled a bit to room temperature.

In the roasting tin, combine the butternut, walnuts and cheese (if youre using). Mix well. Drizzle about half of your red wine sauce over and toss gently to combine.

Arrange the spinach couscous on a serving platter or in a large bowl. Make a well in the centre, and place the butternut mixture into the well. Drizzle the rest of the red wine sauce over, and serve. Enjoy with loved ones.

PS – the leftovers are divine for lunch the next day, tossed together as a salad – or you could bring the whole thing on a picnic as a salad – its good cold too!

Braised Broccoli with Red Wine Pasta

Braised broccoli with red wine pastaWhen I started cooking and writing regularly for this blog, I decided to let my whim take me where it would .. and of course, it lead me down the paths of cream, butter, and lots and lots of chocolate. But woman cannot live on that alone (well, she can try, but will end up as big as a house)… suddenly my cravings have changed. Gotten simpler, greener, more robust and earthy. I crave broccoli and butternut, spinach and beetroot. I am enjoying this change of focus (notwithstanding macaron class and the occasional batch of cookies) and I adore the food that I am cooking for its simple satisfaction, its beautiful taste, and its health(ier) context.

I am also enjoying the fact that finally my body is starting to listen to itself, and enjoy food for its sensual pleasures, and health giving properties, rather than rely on it for comfort. Its a nice change of pace 😉

Given all of that, this pasta is something that I have been wanting to try for ages. I found myself with a bottle of wine left over from the World Cup, and so … Braised broccoli, succulent and green, chili, garlic, and toasted almonds top plain pasta that has been finished in a bottle (yes, a whole bottle) of red wine. The pasta gets cooked in regular water first, and after five minutes, gets drained, and then finished off in wine. Because the pasta is already part of the way there, its pores are open, so to speak. It soaks up the wine, gaining a wonderful slightly bitter winey intensity, and glorious colour. Zinfadel is best for colour, but I only had a cabernet – didnt turn out half bad if I say so myself.

This meal is a quick meal that feels like a celebration. Its so dramatic, the colours are so beautiful, and its soul satisfying.

Serves six (greedy) to eight people

Braised broccoli

  • 1/3 – 1/2 cup almond flakes or chunks (about 60 – 90 g)
  • 500 – 750 g (1 – 1 1/2 lbs) broccoli and cauliflower of your choice (I like a mix of regular broccoli, romanesco broccoli and purple cauliflower)
  • 2 – 3 tbsp olive oil (add some butter if you are not vegan just for depth of taste)
  • 7 – 9 cloves of garlic, sliced thin
  • 1 – 2 tsp red chili flakes
  • 1 tsp oregano
  • Salt and pepper
  • 1- 2 cups vegetable stock (made from a stock cube if you like) or white wine or water
  • 1 tbsp lemon juice

In a large, dry, non stick frying pan, over medium to low heat, toast the almonds until they are golden brown. Pour off into a bowl, and set aside for later.

Peel the leaves off the broccoli, trim the stems, separate the head into small flowers, and chop the large stalks into medium sized chunks. Keep the stalk chunks and the separated flowers of broccoli separate. Rinse the broccoli under cold water.

In the same large frying pan, heat olive oil (and butter if you are using), over medium high heat, until the oil starts to shimmer.

Add the garlic and allow it to soften for a few minutes. Add the chili flakes and oregano, and the chopped stalks of broccoli, and allow to cook for 5 – 10 minutes until just tender crisp. Add the flower heads of broccoli to the pan, season with salt and pepper, and allow the heads to just sear in the hot oil. You will have a pretty full pan at this point.

Add about half a cup of vegetable stock and let the broccoli braise in this liquid for at least 5 – 10 minutes. Test for doneness – add more braising liquid if needed.

Once the broccoli is cooked to your liking (I like it still with a bit of bite in it rather than boiled to within an inch of its life), sprinkle over the lemon juice and set aside on the stove top.

Red wine pasta

  • About 1 tsp of olive oil or canola oil
  • 1/2 tsp salt
  • 500 g (1 lb) spaghetti or fettucini (nothing too fragile like angel hair)
  • 1 bottle (3 cups) red wine – preferably Zinfadel for the colour, but you can use anything
  • 1 tsp sugar
  • 1 cup cooking water from first pasta boil

First of all, lightly oil the inside of a large pot with olive or canola oil. This will encourage the pasta not to stick to the inside of the pot as it cooks.

Boil about 3 litres of water in the pan, and add salt. Add the pasta and cook for exactly 5 minutes. The pasta will have softened, but will not be al dente yet.

Drain the pasta, reserving about 1 cup of the cooking water.

Return the pot back to the heat, and pour in the bottle of wine and add sugar. Allow the wine to come to the boil, and reduce slightly, about 3 – 5 minutes. Add the pasta to the wine, and with tongs, turn the pasta in the boiling wine, allowing all of it to be covered by the wine. Check often, but after about 6 – 10 minutes the pasta should be a beautiful wine colour, and al dente. You might need to add the additional cup of cooking water in case the pasta is taking a little longer.

To serve

  • Red wine pasta
  • 1/4 cup grated parmesan or pecorino (with additional to serve) – optional
  • Toasted almonds
  • 1 tsp olive oil
  • Braised broccoli

Using your tongs, transfer the red wine pasta onto a serving platter. If there is any boiling liquid left in the pot, make sure to let it drip off the pasta as you transfer it.

Add the parmesan (if you are using), half the toasted almonds and the olive oil, and toss the pasta. Add the broccoli, reserving a few pretty florets for presentation) and all its cooking liquid to the pasta, and toss, making sure that there is an even distribution of garlic and broccoli throughout. Taste and adjust salt and pepper as needed.

Arrange a few florets on top, sprinkle with the remaining almonds, and serve immediately.

Port Wine Poached Figs Oven Roasted with Cashel Blue

Figs roasted in port wine with Cashel BlueAs I have written before, I am being inspired by things all around me. Recently, I read a post on Facebook about oven roasted figs with a gorgonzola sauce and thought, hmmmm, I want to do that! But of course, I wanted to work with what I had, and I wanted to make it perfect for my taste. This dish seems to be “high-falutin gourmet food” (as my friend Jobby said), but actually, its so easy to make, and so dramatic and beautiful to present. I adore figs – they have a luscious, sensual earthy appeal. They are perfect just as they are, but add port wine, a touch of spice, and some deep oven roasting and you get ambrosia. These can be served as starters or main courses, and one per person with a bitter green salad is perfection. Though the greedy ones in your family might demand more, so be prepared!

You could actually make these with dried figs, especially because of all the poaching in wine. But I prefer fresh figs… there is something so inspiring about these deep purple swollen fleshy fruits. And obviously, something downright sexy. I used to really dislike figs, but as I grew older, they somehow just grew on me. I am still not a fan of dried figs – the intensity of all that flesh and sugarsweet is just not for me. But fresh figs have a unique place amongst fruit, and they are surprisingly good for you too – a rich source of potassium, dietary fibre, and manganese. That, and they are yummmmmmy.

This recipe is really easy. You dont even need measurements, though if you are a stickler, I have given you some broad strokes. Work with what you have. Port wine for me, juice for you and red wine for someone else. Add or subtract things you like and dont like. Figs are precious. Make them as YOU want them, not someone else!

For 4 people you will need:

  • 4 – 8 figs
  • 4 cups (2+1+1) port wine (you could make this up in a variety of ways – port wine + red wine + a berry based fruit juice or use all of one or a mix)
  • 1 cup water
  • 1/2 tsp mixed spice (or cinnamon or nutmeg)
  • 1 tbsp butter
  • 2 tbsp old balsamico vinegar
  • 1 tsp Cashel blue (or other blue cheese) per fig

In a large saucepan or frying pan, over medium-high heat, poach the figs in 2 cups of port wine and 1 cup of water for about 20 minutes. You want the figs to plump up and the port wine to reduce by at least half. If you are using dried figs, add about half an hour of poaching time, at a slightly lower heat. You can leave them largely unattended, though it is nice manners to go over a few times, and bathe them in juices 🙂 About 10 minutes in, sprinkle over the mixed spice.

When the figs look lovely and thick and plump, take them out, and transfer to a heatproof serving pan. Try and get the figs to fit just nicely in the pan – something too big will make the gorgeous juices dissipate and possibly burn. Leave to cool for a moment.

Meanwhile, pour another cup of port wine, or some juice, into the bubbling thickened juices from the poaching. Boil this down to a very thick jammy sauce. As it thickens, stir in the butter to give more body, and taste – you might want it a bit peppery or slightly more spicy. If so, adjust accordingly. Set aside to serve with the figs.

Using a kitchen scissors, cut the figs open from the top. I usually cut them with one “half” bigger than the other, and then split this “half” in two, so I have a three petaled fig. Open up the fig, and drizzle some very old very delicious balsamic vinegar in the centre. Pour the remaining port wine into the pan, and oven roast the figs for about 30 minutes, in a 180C preheated oven.

Take the figs out of the oven, and switch on the broiler. Stuff the figs with a teaspoon (or more if youre feeling wealthy!) of Cashel blue (or Stilton or other blue cheese), and broil for 5 minutes or so or until the cheese is melted and bubbling.

Serve with a walnut and rocket salad, with the port wine sauce on the side.

My Tomato Sauce

For pasta, for pizza, for salsa… for just about anything. When I need a pasta sauce that is delectable, this is the one I go to. Its been “developed” over more than 20 years of cooking tomato sauce. I have friends who remember me cooking a version of this sauce when I was 14 years old! Im almost 40 now 😉  Its ingredients are malleable but there are some broad rules that I usually stick to:

  • Keep a base of onions and loads of garlic
  • Always use a mix of tomatoes – I use at least 2 types of fresh tomatoes, canned pomodoro, and tomato paste. This ensures a really deep level of tomato flavour. Sun dried tomatoes are also awesome in this sauce.
  • Try and use a mix of fresh and dried herbs. Again, these impart very different flavours, and mixing them really lends depth to the sauce
  • You can use a mix of vegetables (see below for what I put into it) but try and make sure there are some carrots for sweetness

I first started cooking this sauce in high school when I used to have loads of people over for pool parties. It was the most forgiving sauce because you could simmer it for ages, and it just got better and better. As long as the basic rules were followed, and the bones of the sauce were respected, you could add just about any vegetable (bar potatoes or pumpkin) that you wanted.

When I went to university, I started making this sauce for my housemates. There was always something missing, until one day, I hit on a magic combination. And this is the secret to the sauce, without which you will not have the same sublime flavour and glossiness. These are non negotiable. You need at least 1 eggplant for silky smooth, shiny unctuousness, and a big handful of prunes for a dusky sweetness that you just cant place in the final taste. These two ingredients are secret because they both melt into the sauce, encouraging and supporting its flavour without pushing their own agenda into the story. Eggplant and prunes. Who would have guessed?! Please do not try and make this sauce without these two – I promise, it will make you so very happy that you trusted me. 😉

For about 4 – 6 cups of finished sauce, you will need:

  • 2 medium white onions (approx 2 cups), minced
  • 7 cloves of garlic, minced
  • 1/2 cup of extra virgin olive oil
  • 2 tbsp butter (optional)
  • Salt and pepeper
  • Fresh basil, thyme, marjoram, oregano and rosemary, minced fine – about 1/2 cup in total
  • 1 large or about 5 baby eggplant (approx 2 cups) roughly chopped
  • 1 tbsp balsamic vinegar
  • 1 large red pepper (approx 1 cup), deseeded, roughly chopped
  • 4 – 6 baby carrots (approx 1 cup), peeled and roughly chopped
  • 1/2 cup red wine
  • 3 tbsp tomato paste
  • 1 medium zucchini (approx 1 cup), roughly chopped
  • 2 cup mixed tomatoes, roughly chopped (I used cherry and baby roma)
  • 8 medium portobello mushrooms (approx 3 cups) peeled and very roughly chopped
  • 2 x 400 g cans of pomodoro tomatoes in juice – about 4 cups, made up with wine or water if needed
  • 15 pitted prunes
  • 2 tbsp brown sugar
  • 1 – 2 tbsp mixed Italian herbs (dry)

In a heavy 5 qt saucepan, soften onions and garlic in about 2 tbsp olive oil and butter (if you are not using the butter, just use a little more olive oil), over high heat. Keep the olive oil by the side of the stove, and add more when you feel the ingredients are sticking to the bottom of the pan.

Season the onion mixture with salt and pepper, and add about 3 tbsp of the minced mixed fresh herbs, and mix well. Lower heat to medium high, and add the eggplant. Mix well to ensure its covered with oil and onions. Add  balsamic vinegar, and mix to brown a little.

Add red pepper and mix well, and then a few minutes later, add carrots and mix well.

Add all the red wine and the tomato paste, mix well, and turn the heat to low. Add zucchini, mix well, and then add the raw tomatoes and mix well. Add the mushrooms and mix to combine all, keeping check that nothing is sticking and add olive oil if neccessary.

Measure out 2 cans of pomodoro tomatoes in juice into a large measuring cup and make up to 4 cups with wine or water if needed. Smash the tomatoes with a fork so they are roughly chopped, and add all at once to the pan.

Cover the sauce, and allow to begin to simmer and steam. Meanwhile, pit the prunes, and chop roughly. Add the prunes and brown sugar to the sauce and mix well.

Let the sauce simmer, covered, for approx 15 – 20 minutes, mixing every five to ten minutes to ensure it does not burn.

Uncover, mix very well, and let simmer for at least 45 minutes to a couple of hours, over low heat, or until reduced by half. Ensure you check the sauce every 15 minutes or so to ensure it does not burn. You can add more wine if you want a particularly deeply wine-ey sauce.

Taste for flavour and season with salt and pepper if needed, or even some more sugar, and add dried herbs. About five or ten minutes before finished, add the rest of the fresh herbs to let their scent permeate the sauce.

Once the sauce is to your liking, take off heat and decide if you want to keep it chunky (which is nice for some pastas, salsas, etc) or if you want to blend it smooth. I use an immersion blender here. If you do blend it please make sure it has cooled to at least lukewarm – hot splashing tomato sauce is a real pain!

If you are using this as a pizza sauce as I will be, make sure you have at least one cook’s meal with about half a cup of sauce mixed with some angel hair pasta! Soul satisfying.

This freezes extremely well. I often freeze in an ice cube maker and then transfer to a zip loc bag. Alternatively, measure out by cupfuls into a sandwich ziploc bag and freeze flat. Keeps for up to 6 months.
