Candied Caramelised Oranges

Are you stuck for a Christmas dessert that you can make without much thought, and which will taste as if you have put in hours of work? These candied, caramelised oranges might just be the thing. I love their jewel-like colour – a deep dark citrine or amber … glistening with orangey caramel syrup that they make themselves. Theyre blowsily sexy – soft, sticky, totally decadent and delectable. They taste like the holidays… and believe me, theyre so simple, its almost embarrassing!

I decided to make them because I am working on a Chinese New Year cake that uses candied and dried fruits. I love those little tiny oranges you can get this time of year  – mini mandarins from China. You could also use kumquats. They are the main component of the recipe, so make sure you get good ones. Everything else you need, you probably have in your pantry. Its really up to you what flavourings and essences you use – most of the time, I just add sugar, water and a touch of juice.

How I can call this a recipe, Im not sure. Its so simple, but its gorgeous. Lush with the oranges’ own caramel, the little tiny orange balls go translucent, and then a deep dark hue that has a richness and beauty all its own. Serve warm (you can make ahead and reheat, or just stick it on the stove in the morning, and let it go) with some vanilla ice cream or a dollop of heavy cream, and youre done. Heaven. Sweet, bitter, astringent, caramel, citrus, smoke – such a complexity of flavour, and so so easy. In the stress and mess of the holidays, sometimes that is a gift in and of itself.

To serve 4 – 6 people, you will need:

  • 2 cups light brown or caster sugar
  • 1/2 cup water
  • 1/4 cup juice (or even wine)
  • Spices if you want – cinnamon is great here, as are cloves, star anise, nutmeg – but be gentle!
  • 4 cups of tiny mandarin oranges

Place a large pot, with lid, on stove top. Add sugar, water, juice and any spices. Bring gently to the boil, over low-medium heat, stirring every so often to dissolve the sugar. The sugar will boil up eventually, and then become clear. Turn the heat right down so the sugar syrup is just bubbling – little tiny plops.

Wash the little oranges well, ensuring that the little stem is removed, if needed. Poke each orange several times with a toothpick.

Place the oranges in the sugar syrup, gently gently. Give everything a stir, make sure the heat is very very low, and cover.

Simmer the oranges in the syrup for at least 1 – 2 hours, longer if you like. They will turn translucent and go very dark. Its almost like youre making marmalade, but with whole oranges.

Everything will caramelise, the oranges will leak their juice and essence, and the syrup will also turn a gorgeous burnt sticky orange.

Serve warm, with a bit of ice cream, mascarpone, or heavy cream. Heaven.

Suji (Semolina) Cake 2

HappySo, I was thinking about the suji cake I made earlier this month. It was quite delectable, and very rustic. Nubbly bits of almonds gave it texture and a deliciously different crumb. It was the suji cake of my memory and my childhood… But there were a few things about it that annoyed. First and foremost, you really had to make this cake with forethought. No popping a few ingredients together, and quickly baking in the oven. The butter and suji had to be left for a while to get acquainted, which is fine if you have the time, but if you really want suji cake right here, right now, could be a bit frustrating.

There was another suji cake of my memory that was slightly smoother, more pudding-y, with the same gorgeous scent, and since I havent been well, and have not had much to do, I decided to try and see if I could come close to making it. I succeeded quite well with this cake, and it took about 20 minutes to put together, and a further 20 – 30 minutes in a hot oven to bake. Easy and quick, this is a different suji cake, but just as comforting, just as golden, and just as open to interpretation – may be even more so.

I used vanilla to scent this cake, but you could certainly go with cinnamon, some almond essence, the grated rind of an orange or lemon… Go with what comforts you, and get semolina that is as fine as possible… and yet, not floury. You want the texture and the bite of the semolina in this cake. Its a big part of what makes it so unique.

If the previous cake was a bit intimidating, start with this one. Its a pleasure to make, and a joy to smell baking in the oven. Its a fantastic little cake to offer friends who are dropping by for tea. It creates happy happy memories, even when you might be struggling with a cold, or tiredness, or just the regular woes of the world. A little sifted icing sugar, or a simple glaze, or a smear of buttercream elevates this cake, but its so good it doesnt really need it. As you can tell from the photo – I was so greedy for a taste, I sliced it straight out of the pan, without waiting to sift any icing sugar on my bit.

This little golden cake seems to say, for that one glorious instant, its OK. Just have some cake, and be happy.

Makes 1 9-inch cake

  • 1 3/4 stick (12 tbsp) butter, slightly softened
  • 3/4 cup icing (powdered) sugar plus an additional / optional 1/4 cup for sifting over cake if you wish
  • 5 eggs separated – 5 yolks plus 4 whites (the extra white can be discarded or saved for a future use)
  • 1 tbsp sour cream
  • 1 tbsp vanilla essence (or 1 vanilla bean scraped – or in fact, and flavouring that seems to catch your fancy)
  • 1/4 tsp salt
  • 1 cup fine semolina
  • 1 tsp baking powder
  • 1 cup ground almonds

Preheat your oven to 175C (350F). Butter a 9-inch cake tin, and line with baking paper. Butter that too, and set the cake tin aside.

In a large mixing bowl, cream the butter until soft and slightly fluffy. Add 3/4 cup icing sugar, and cream well. It will look like the beginning of buttercream. I decided to use icing sugar in this recipe because I wanted the softness of the cake to be highlighted. The fineness of the icing sugar really helped.

Add the 5 egg yolks, one at a time, beating on low speed after each addition until fully incorporated, before you add the next. This cake, while quite quick and easy, also relies on a slow and gentle process of addition of each ingredient. I used a stand mixer, and as I added each egg yolk only after I separated it from its white. This gave the batter a period of slow steady incorporation of each yolk before the next was added.

Once all five yolks have been added, you should have a gloriously golden batter. Add the sour cream and vanilla essence, pausing to combine after each addition.

In a measuring cup, combine the salt, semolina and baking powder, and stir with a fork to combine. Add to the egg-butter-sugar mixture in a slow steady stream, beating with a stand mixer or electric beaters all the while, on medium low. Keep beating for about a minute, and then add the ground almonds in a steady stream, beating all the while.

Once the mixture has been well combined, set it aside for at least ten minutes or so.

Clean your beaters, and in a clean bowl, whisk the 4 egg whites until they hold firm peaks. If you turn the bowl upside down, and the egg whites stay, then they are ready – though I would not suggest you do this unless youre sure, or you have extra egg whites to work with!

Once the batter has sat for the requisite time, fold in the beaten egg whites, in three batches, combining extremely well. You need to make sure the batter is fully incorporated. The egg whites will lighten the colour and texture of the mixture. You shouldnt beat them into the batter, but you dont need to be timid about mixing them in firmly with a spatula.

Turn out the batter into your prepared tin, and bake for 20 – 30 minutes, or until the cake is firm to the touch, and a tester inserted into the centre comes out clean.

Let cool for five minutes in the pan, and then turn out onto a cake rack, and turn right side up again. Cover with sifted icing sugar if you like.

A warm slice of this cake will ease just about anything that ails you 🙂 Enjoy.

 

Malaysian Dinner

Last night, after a long journey back home from NYC, I was confronted by a quiet empty kitchen. M had gone upstairs to put Z to bed, J had gone to have her shower, and I realised that we would all be hungry in about half an hour. I wanted to make a REALLY fast, but really delicious meal that would be warm, and full of the flavours of home.

We didnt have much in the fridge, but we did have some tempeh, a half bag of frozen spinach, some milk (for vegans, you can replace with a bit of coconut milk), some salsa with chopped tomatoes and garlic, an onion and jasmine rice. Chili and soy sauces provided heat and flavour, along with a drizzle of toasted sesame oil. This was such a good meal, and took only a few minutes to put together.

Serves four hungry people on a cold rainy day, with the remembrance of sunshine and heat.

Prepare some jasmine rice.

While the rice is cooking, chop an onion, and saute, with a bit of olive oil and a bit of toasted sesame oil, in a medium sized non stick pan until translucent. Sprinkle over some soy sauce and some chili sauce until the onion is very dark and sticky looking. Slice up the tempeh, bring the heat up high, and quick fry the tempeh, ensuring it is covered in the onion sticky mix. You should fry the tempeh in an even layer, and then flip it over. Add more soy or chili sauce if you want it stickier, saltier or hotter. Once the tempeh has been cooked on both sides (it will get a bit brownish and will start to burn on the edges), stir fry it a bit, and transfer to a bowl. Set aside to serve. This should take you about ten minutes total.

Clean out the frying pan, and put half a bag of frozen spinach (or 2 – 3 cups fresh, chopped) and a few tablespoons of salsa into the pan. Put the heat on to low, and let the mixture melt and come to room temperature. Add the milk or coconut milk (I used about half a cup), and about a teaspoon of soy sauce. Let the mixture come to a boil, and let it bubble down a bit. Taste for saltiness and adjust. If you have it, sprinkle over a half a teaspoon or more of garam masala for a soft hint of spice.

Serve the spinach and tempeh with rice for a simple, easy Malaysian meal.

PS – We were so hungry, and it smelled so good, I forgot to take a picture! But trust me, its easy, delicious, and it looks beautiful, with the deep creamy green of the spinach, the sticky golden chili tempeh and the pure white rice.

Another World Cup Sandwich + Strawberries

Tonight we watched and ate and laughed and played with cats. A good night was had by all. We needed simple, delicious, easy to make food, and I didnt really feel like cooking anything complex.

Grilled Tortilla Sandwiches

These grilled cheese and salsa soft tortilla sandwiches are really yummy, and can adapt to what you have in the house

For each sandwich you need:

  • 2 soft flat tacos/wraps
  • Salsa (bottled is fine)
  • Cheese (jack, cheddar, parmesan – whatever you feel like)
  • Soft butter
  • Mushrooms/avocado/tomatoes/sliced raw onions (one or a mix of all three)

Butter one side of a soft tortilla and place on a medium large frying pan, butter down. Place pan over medium heat, and spoon about 2 tablespoons of salsa over the tortilla. Grate cheese over the entire tortilla, and watch it melt . Add the additional filling – I used some quickly sauteed mushrooms – and butter the second tortilla. Place the tortilla over the sandwich fillings, butter side up, and flip it when you feel the bottom side has browned sufficiently. Fry for a minute or two on the second side, and slide onto a large plate. Cut into fourths. Give it a minute to cool down before demolishing.

Strawberries with balsamic

Unbelievably delicious. The acid in the balsamic breaks down the tender strawberry flesh, and creates a phenomenal sauce. More strawberry than the strawberriest strawberry – and so damn simple. Makes more than enough for four people.

  • Strawberries, hulled and sliced (about 2 – 3 cups)
  • 1 – 2 tablespoons balsamic vinegar (the older the better)

In a non reactive (glass preferably) bowl, slice strawberries. Pour over the balsamic, and using a spoon, stir well to ensure the vinegar completely coats the strawberries. Leave for at least half an hour in the fridge. A strawberry liquor will form – its so damn good, I cant tell you.

Serve strawberries spooned over vanilla ice cream or cold vanilla custard, with a little of the sauce drizzled over each serving.

Quick Hot Family Dinner in 5 minutes (honestly)

It will take you longer to read this recipe than it will to cook it. This is for when you wake up at 4am and cant believe how starving you are. When your tummy needs filling, and you just don’t want to do any work at all. You come home from work, or you’ve been chasing the kids all day, and all you want is sustenance. Or you come home after a night on the tiles (where does that phrase come from?!) and you need something starchy and yummy and simple to soak up all that booze. You can make it for more than 1 person, but its basic. Totally delicious, but basic. Once you have this little trick up your sleeve though, you will be making up excuses to eat it. Don’t try to dress it up. There really is no need.

  • 1 large bowl that you will eat out of
  • ½ cup couscous
  • ½ cup boiling water
  • Butter
  • Salt
  • Cheese (Cheddar + Parmesan may be? Whatever you have both that combo is superb)
  • Some frozen peas for colour (and veg) or some tomatoes

Boil some water. As it comes to the boil, put ½ cup of couscous per person in the bowl that youre going to eat out of. Remember that couscous swells, so make it double the size of the amount of couscous youre using.

Put a pinch of salt in with the couscous and mix it all up with a fork. Add some butter to the couscous (may be about 1/2 teaspoon per person or more as you wish, and as your arteries can handle!)

Pour the ½ cup of boiling water over the couscous and cover (I use a sideplate). Leave for 3 -4 minutes.

While the couscous is absorbing the water, and plumping up, get your cheese out the fridge and find a grater. Uncover your bowl, and fluff the couscous up with a fork. Taste and adjust for saltiness. Grate some cheese over this mixture (not a lot, but enough to flavour it) and mix well. Pop in some peas or a few sliced tomatoes to make yourself feel better, and for the “veg” component.

Eat thankfully.
